Macelleria Scalino has participated in the Slow Food movement in Switzerland since its inception. Their excellent product "Furmagin da cion" is one of the very few Swiss Slow Food Presidia.
In the local dialect "al cion" is pork and "Furmagin da cion" means a meat pie. A curious name, perhaps used by the locals because this pork pie was once prepared in pots or baking dishes, assuming a large round shape, similar to a form. The "Furmagin da cion" is a traditional cured meat once made in every peasant family in the valley. It was the product that was consumed during the mazziglia, the killing of the pig. The recipe varied from family to family but at the base there were always the poor parts of the animal such as neck, cheek, liver and belly, which were chopped, spiced and baked in the oven.
